  • Wholegrain or sourdough bread – 40g (1 slice)

  • Avocado – 50g (about ¼ of a medium avocado)

  • Extra virgin olive oil – 5g (1 tsp drizzle)

  • Salt & pepper – to taste


Instructions:

  1. Crack the eggs into a bowl, season with salt and pepper, and whisk until smooth.

  2. Heat a non-stick skillet over medium heat and add the olive oil.

  3. Once hot, pour in the eggs. Immediately add cherry tomatoes and spinach.

  4. Gently stir the mixture until the eggs are cooked, the spinach is wilted, and the tomatoes are soft and juicy.

  5. Meanwhile, toast the slice of bread until crisp and golden.

  6. Smash the avocado over the toast, then top with the warm egg and vegetable scramble.

  7. Serve immediately with extra black pepper or chili flakes, if desired.
