Ingredients (grams):
- 400 g beets (about 4–5 medium), roasted
- 10 g extra virgin olive oil (for roasting)
- 60 g salad greens (arugula or spring mix)
- 20 g shallot, thinly sliced
- 50 g green apple, thinly sliced
- 30 g toasted walnuts
- 56 g goat cheese, crumbled or broken into pieces
- 15 g balsamic vinaigrette
- Sea salt and freshly ground black pepper, to taste
- Microgreens (optional, for garnish)
Instructions:
- Preheat oven to 200°C (400°F).
- Wrap each beet in foil with a little olive oil and a pinch of salt and pepper. Roast on a baking sheet for 40–90 minutes depending on size, until tender.
- Let cool slightly, then peel under running water and refrigerate.
- Slice the cooled beets into approximately ½ cm thick slices.
- Arrange the salad greens on a large plate or shallow bowl. Top with shallot, apple, beets, walnuts, and goat cheese.
- Drizzle with balsamic vinaigrette and finish with sea salt, black pepper, and microgreens if desired. Serve immediately.
