Frozen Raspberry Almond Protein Yogurt Bark

Ingredients:

225 g Greek vanilla yogurt

60 g raspberry purée (from ~100 g raspberries)

15 g pure honey, maple syrup, or agave

25 g almonds, toasted and chopped

15 g vanilla protein powder

Optional topping: 10 g extra raspberry purée + 10 g chopped almonds
Instructions:

In a bowl, mix yogurt, raspberry purée, sweetener, vanilla protein powder, and chopped almonds.

Line a small baking tray with cling film or parchment paper.

Spread the mixture evenly to ~1 cm thickness.

Swirl extra raspberry purée and sprinkle remaining almonds on top.

Freeze for at least 3 hours or until solid.

Break into pieces and serve immediately.

Store in an airtight container in the freezer for up to 1 month.
