Frozen Raspberry Almond Protein Yogurt Bark

Ingredients:

  • 225 g Greek vanilla yogurt

  • 60 g raspberry purée (from ~100 g raspberries)

  • 15 g pure honey, maple syrup, or agave

  • 25 g almonds, toasted and chopped

  • 15 g vanilla protein powder

  • Optional topping: 10 g extra raspberry purée + 10 g chopped almonds


Instructions:

  1. In a bowl, mix yogurt, raspberry purée, sweetener, vanilla protein powder, and chopped almonds.

  2. Line a small baking tray with cling film or parchment paper.

  3. Spread the mixture evenly to ~1 cm thickness.

  4. Swirl extra raspberry purée and sprinkle remaining almonds on top.

  5. Freeze for at least 3 hours or until solid.

  6. Break into pieces and serve immediately.

  7. Store in an airtight container in the freezer for up to 1 month.
