Blackberry Avocado Arugula Salad with Lime-Mint Vinaigrette

This vibrant, antioxidant-rich salad combines sweet blackberries, creamy avocado, crunchy cucumber, and peppery arugula with a refreshing lime-mint vinaigrette. Ingredients (2 servings)

  • Arugula – 100 g

  • Blackberries – 145 g

  • Blueberries – 115 g

  • Avocado (diced) – 150 g

  • Cucumber (thinly sliced) – 180 g

  • Feta cheese (crumbled) – 50 g

  • Toasted hazelnuts – 40 g


    Instructions:

    1. In a large bowl, combine arugula, blackberries, blueberries, avocado cubes, cucumber, and crumbled feta.

    2. Add toasted hazelnuts for extra crunch.

    3. In a separate bowl or jar, whisk together olive oil, lime juice, maple syrup, chopped mint, salt, and pepper.

    4. Drizzle the vinaigrette over the salad just before serving and toss gently.

    5. Serve immediately, optionally garnished with a few extra berries or mint leaves.

  • Olive oil – 70 g

  • Fresh lime juice – 30 g

  • Maple syrup (or honey) – 20 g

  • Fresh mint (finely chopped) – 6 g

  • Salt – 4 g

  • Black pepper – to taste
